Amarone and chocolate: Cecilia Rabassi created My Way, the perfect combination with Valle Alta
Combining wine with chocolate is not an easy job; and if this matching involves Amarone and Chocolate, everything becomes even come complicated. However, there are some exceptions and these depend only on the quality of elements. If chocolate reaches the highest levels, it is then able to offer unexpected emotions and unimaginable experiences.
Thanks to Cecilia Tessieri Rabassi, the first woman Maître Chocolatier in the world, the fusion with Amarone della Valpolicella DOCG Valle Alta, has become possible with one of her most exciting creations: My Way.

Tomorrow’s Chocolate
Cecilia defines it “the result of 30 years of experience in the world of cocoa and chocolate, chocolate in marble and alabaster tanks“. Also My Way, like all the other creations, Cecilia defined them “Tomorrow’s chocolate“: an hedonistic interpretation of fava bean performance’s potentiality, selected directly by her.
Diving in her chocolate means elevating the spirit and catch emotions.
The maitre Chocolatier who invented the single-origin
The woman of Italian chocolate reformulated the concept of chocolate tasting and, most of all, revolutionized the meaning of “origin“. For the first time with her we started talking about single-origin, of “cru“, like we define it today; she created the visionary world of Amedei and, from about one year, realized yet another breakthrough in her history.
Her new refuge today is in Capannoli’s lab, in the Chocolate Valley in Pisa. She elevated her experimentation with the use of marbles from Carrara and alabaster from Volterra, for the managing of temperature of the maturation of the fava beans thanks to which she’s obtaining aromatic correlations and sensorial stratifications never reached before.
My Way and Valle Alta more than a combination, a destiny
When Giambattista Ugolini and Cecilia Tessieri Rabassi met in Verona for the first time, they defined the combination between Amarone and its Chocolate: a revelation. My Way manages to merge in a virtuous way, both aromatically and stylistically, with the Valle Alta.
A sinuous intersection of bitter spices’ notes, red wild berries and a balsamic note that, form the pine tree needle of the chocolate, sweetens until transforming into the liquorice root of Amarone. The outstanding looseness of My Way and its creaminess, create an emotional sensation of Amarena’s boero typical of Fumane.
